Services Offered 

 

FoodFellas, LLC and Premier Food Trucks can typically provide the following services (custom services can be quoted):
 Working with the builder, help Client manage through the build process, including
o Truck layout to meet productivity and throughput targets by hour/service time
 Registering the food truck in your state
 Submitting plans, blueprints and related documents to the Department of Public Health,
your county for approval
 Submitting plans, blueprints and related documents to Department of Housing and
Community Development to obtain HCD Insignia of Approval (typical for Calidfornia, may
vary state-to-state)
 Identifying and securing an approved commissary location for the food truck (as needed,
you may use your brick and mortar if local ordinance allows)
 Inspection and approval of food truck by Department of Public Health, your county
 Obtaining local business licenses and permits in all counties that might be visited by the
food truck
 Deliver an Operations Handbook that addresses the operation of the food truck to
include:
o DOT requirements and operation of a commercial step van, including Pre-Trip
and Post-Trip inspections
o Truck operation checklist, Pre-Trip and Post-Trip
o Identification and operation of all equipment on the food truck
o Warranty information and contacts for all truck equipment
o Specific menu item preparation and build instructions
 Training crew/employees and designated contractors in the operation of the food truck
 Provide outsourced management of food truck operations, including hiring crew,
providing truck operations management and complete performance reporting for
ownership
 Create and execute a social media plan for the food truck (Facebook, Twitter, Instagram,
Snapchat, etc.)
 Help create website for the food truck and track web analytics
 Create and publicize a calendar of events highlighting vending, catering and special
events
 Provide consulting on truck operations including:
o Engineered menu offerings, including cuisine and specific signature items
o Margin analysis and food cost/labor cost calculations for selected menu
o Operating Plan to include recommended number of days/hours in vending,
catering and special events, labor scheduling, food cost analysis, etc.
o Monthly Financial budget for 12 to 18 month planning horizon
o Recommended PL&PD and Maintenance accruals for budget
o Estimate of monthly accruals to support Operating Plan
o Define and provide inventory, food prep and food ordering process

Beginner Package
Duration: 1-2 month minimum
Provides:
 Up to 20 hours of direct consultation per month
 Basic templates to assist in financial analysis of break-even
 Interface with Builder as needed during build timeline
 Basic layout design to maximize productivity
 Basic Social Media and Marketing Promotion strategy
 Assist with initial permitting and inspection
 20 hours of operational training
 Generic Operations Manual

 

Intermediate Package
Duration: 3-4 months minimum
Provides:
 Up to 40 hours of direct consultation per month
 Templates to assist financial analysis of break-even, annual operating budgets, etc.
 Interface with Builder as needed during build timeline
 Menu design and engineering (vending, catering and special events)
 Layout and equipment design and engineering to maximize productivity and profit
 Targeted Social Media and Marketing Promotion strategy
 Assist with permitting and inspection during duration of engagement for all events
 Identify and secure desirable vending and special event locations
 40 hours of operational training, including position specific training (e.g., crew leader, etc.)
 Customized Operations manual, including menu item build instructions and station job aids, DOT requirements, etc.

 

Comprehensive Package
Duration: 6 – 9 months minimum
Provides:
 Minimum of 75 hours per month of direct consultation, maximum of 150 hours of direct consultation per month
 Templates to assist financial analysis of break-even, annual operating budgets, etc.
 Menu design and engineering (vending, catering and special events)
 Layout and equipment design and engineering to maximize productivity and profit
 Targeted Social Media and Marketing Promotion strategy
 Assist with permitting and inspection during duration of engagement for all events
 Identify and secure desirable vending and special event locations
 Assistance with sourcing and selecting crew
 80 hours of operational training, including position specific training (e.g., crew leader, etc.)
 Customized Operations manual, including menu item build instructions and station job aids, DOT requirement, etc.
 Bi-weekly review of operations with recommended corrective actions as needed to meet budget and performance targets
